Chick Peas (Desi & Kabuli): Chick peas are also known as Garbanzo Bean, Cecil Bean, Bengal Gram and Chana. It is the third most important food legume grown and consumed world over. It is the most nutritious pulse with high protein content. The plant grows between 20-50 cm (8"-20" inches) high and has small feathery leaves on either side of the stem. Chick peas are a type of pulse with one seedpod containing two or three peas. It has white flowers with blue, violet or pink veins. Chick peas need a subtropical or tropical climate with more than 400 millimeters (16 in) of annual rain. They can be grown in a temperate climate but yields will be much lower. Chick peas are very good source of carbohydrates and proteins, which altogether constitute about 80% of the total dry seed weight. Starch, which is the principal carbohydrate component, varies in content from 41 - 50% and is lower in Desi varieties than in Kabuli varieties. Total seed carbohydrates vary from 52 - 71%. The crude protein content of chick peas varieties ranges from 16 - 24%. Crude fiber, an important constituent of chick peas is mostly located within the seed coat.
Based on amino acid composition, the proteins of chick peas seed were found, on average, to be of higher nutritive value than those of other grain legumes. Chick peas meet adult human requirements for all essential amino acids except methionine and cysteine and have a low level of tryptophan. Chick peas have a high protein digestibility and are richer in phosphorus and calcium than other pulses.

Desi Chick peas has high fiber content compared to the Kabuli variety, which has small, darker seeds and a rough coat, cultivated mostly in the Australia, Indian subcontinent, Iran, Mexico & Ethiopia. The Desi (meaning 'country' or 'local' in Hindi) is also known as Bengal gram or kala chana. The Desi type is used to make Chana Dal, which is a split chickpea with the skin removed. Desi Chick peas are used mainly in dhal, sauces, puffed or ground into flour. It is widely used in Asian and African cuisines. Desi is likely the earliest form since it closely resembles seeds found both on archaeological sites and the wild plant ancestor (Cicero reticulate) of domesticated chick peas, which only grows in southeast Turkey, where it is believed to have originated. Desi chick peas have a markedly higher fiber content than Desi types have small angular seeds weighing about 120 mg, are wrinkled at the beak and range in color from brown, light brown, fawn, yellow, orange, black or green. They are normally dehulled and split to obtain dhal and are favored in India.
